Maple Bacon Syrup
5 slices smoked bacon, smoke flavor of choice, chopped into small pieces
1/2 cup real maple syrup
Stalk bacon slices on a cutting board and chop into small pieces. Alternatively, use a pair of kitchen scissors to cut bacon into small pieces.
Place a large non-stick skillet over medium heat. Add chopped bacon to cold skillet.
When bacon starts to sizzle, about 4-5 minutes, move bacon about over hot suffer of skillet with a spatula.
Cook bacon through, being careful not to crisp it, about 7-8 minutes.
Add maple syrup to skillet. Remove from heat. Mix cooked bacon, bacon fat, and maple syrup until well combined.
Pour maple syrup mixture into a small bowl and set aside to cool, about 5 minutes.
Once cooled, pour over pancakes, French toast, fried apple slices, vanilla ice cream or mix in to plain Greek yogurt. So many choices.
