One-Skillet Creamy Garlic Pork Chops

4 pork chops, boneless

Salt & pepper to taste

1 tablespoon olive oil

2 tablespoons butter, divided

1 whole head garlic, cloves peeled

1 tablespoon flour

1/2 cup chicken stock

1/2 teaspoon lemon juice

1/4 teaspoon garlic powder

3/4 cup heavy/whipping cream

3 tablespoons fresh parsley chopped

Pat dry pork chops with a paper towel. Season the pork generously with salt & pepper on both sides.

In a large non-skillet over medium-high heat, add 1 tablespoon olive oil and 1 tablespoon butter.

When butter is melted and starts to sizzle add pork chops and cook for 3 minutes (thinner chops less than 1-inch thick) or 5 minutes (thicker chops 1 to 1 1/2-inch thick). Once the pork chops are done searing, transfer them to a plate.

Add the remaining butter and garlic cloves to the skillet. Turn the heat down to medium. Cook stirring often, about 3 minutes or until the garlic has browned.

Push the garlic to one side of the pan and add the flour to the center of the skillet. Let it cook for around 30 seconds, then move it about with a spatula to incorporate it with the butter.

Add chicken stock and lemon juice. Stir in and continue cooking for 1-2 minutes or until the sauce is noticeably thickened. 

Add in the garlic powder and cream. Stir or whisk it until the garlic powder has dissolved. 



Add back the chops to the skillet spooning sauce with each addition. Cook 3-5 minutes or until the sauce has thickened and slightly bubbling (chops should be cooked through to 145 degrees minimum).

Remove from heat. Plate and serve.
