Mango Chipotle Dressing
2 Mangoes, peeled, pitted (about 1 ½ to 2 cups) *See Cook’s Notes
4 garlic cloves, peeled
1-2 chipotle chili peppers in adobo, wash peppers and de-seed
1/2 cup olive oil
1/4 cup vinegar
3 tablespoons lime juice
2 tablespoons sugar
1/4 teaspoon salt

You can also use a 16 ounce bag of frozen mango chunks. Thaw before using.
Place into a a food processor and purée the mango flesh, garlic gloves, chipotle pepper, olive oil, vinegar, lime juice, sugar and salt.
If you need to, using a spatula push down the sides of the processor any food particles and continue to puree.
Makes about 2 ½ cups. Store in a medium mason jar with a tight lid in the refrigerator. Use within 10-12 days.
This dressing will make a delicious topping for some chopped strawberries and even a scoop of vanilla ice cream.
