Trofie pasta is a traditional Italian pasta that originated in the region of Liguria.

It is a type of hand-rolled pasta that has a unique twisted shape, resembling little corkscrews or spirals.

This shape is achieved by rolling small pieces of dough between the palms of your hands. It is typically made with just flour and water, making it a simple and rustic pasta.

The texture of trofie pasta is smooth and slightly chewy, making it perfect for soaking up the rich flavors of the pesto sauce.


Trofie Al Rosso Pesto

8 ounce trofie pasta

1 cup rosso pesto sauce – Find Recipe HERE

In a medium pot, cook trofie according to package instructions. Drain pasta, but do not rinse.

Add cooked trofie to a large bowl and toss with pesto sauce until pasta is well coated.



Plate and serve topped with more Parmesan cheese, if desired.
