Cranberry Balsamic Vinaigrette

Imagine a homemade balsamic vinaigrette that lightly coats savory baby arugula leaves, sweet persimmon and juicy mandarin orange slices, dried cranberries, pumpkin seeds, brown sugar glazed walnuts and mozzarella cheese.



Are you still imagining, it’s tangy, sweet, and delightfully tart and it’s a Cranberry Balsamic Vinaigrette.

Consider this a balsamic vinaigrette versatile, as you can also make it with pomegranate or tart cherry juice and mix it with your favorite leafy greens, vegetables and fruits.



Cranberry Balsamic Vinaigrette

1/4 cup cranberry juice, can opt for tart or sour cherry or pomegranate juice

1/4 cup balsamic vinegar

1 tablespoon white wine, can opt for lemon juice

1/3 cup olive oil

Salt and black pepper to taste

In a small mason jar or salad dressing shaker, add ingredients and shake vigorously until combined. Taste and adjust salt and pepper as needed.
