Oatmeal Almond Butter Cookies
1 cup almond butter – link here for a Homemade Almond Butter recipe
1 cup packed brown sugar
¾ cup white sugar
1 cup unsalted butter, room temperature
2 large eggs, room temperature
1 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick-cooking oats
Preheat the oven to 350 degrees
Beat brown sugar, white sugar, and butter in a large bowl with an electric mixer on medium speed until smooth and very creamy, about 4 minutes.

Mix in almond butter. Beat in eggs, one at a time, until well blended.
Combine flour, baking soda, and salt in a separate bowl; stir into creamed mixture until incorporated. Mix in oats until just combined.

Drop teaspoonfuls of dough onto ungreased cookie sheet.
Bake cookies until just lightly browned, 10 to 15 minutes. Do not overbake. Cool for 5 minutes and store in an airtight container.
