Almond Joy Cookies

A cookie recipe inspired by the all time favorite Almond Joy Candy Bar. These cookies are loaded with the wonderful flavors of coconut, almonds and chocolate.

They are guaranteed to steal the show from any offering of a mixed cookie platter. There great with a glass of milk or even a party favorite.

Almond Joy Cookies

1 cup packed light brown sugar 

1 cup granulated sugar

1 cup (8 oz.) unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract 

2 ¼ cups all-purpose flour

1 teaspoon kosher salt 

1 teaspoon baking soda 

1 teaspoon baking powder

2 ½ cups semisweet chocolate chips

1 cup sweetened shredded coconut

Making & Refrigerating Cookie Dough

Beat brown sugar, granulated sugar, and butter with an electric mixer on medium speed until light and fluffy, about 3 minutes.

Next, add eggs, 1 at a time, and beat just until blended. Add vanilla, and beat until blended.

Stir together flour, salt, baking soda, and baking powder in a large bowl. Gradually add flour mixture to butter mixture, and beat on low speed until fully incorporated, about 1 minute.

Next, stir in chocolate chips, coconut, and almonds until evenly distributed. Cover and refrigerate dough 30 minutes or up to 1 hour.

Why Refrigerate Your Cookie Dough

The composition of your cookies will come out differently after refrigeration because of the butter in the dough.

When your cookie dough is not refrigerated, the butter is at room temperature. Therefore the heat from the oven reacts with the butter quickly, making it spread thinner.

When your dough is refrigerated, the butter hardens. So when you bake them, they spread less and hold their shape better.

Refrigerating your dough will get you a golden-brown cookie with a crisper edge sod a soft, chewy center.

Chilling the dough creates fluffier cookies with better consistency. Chilling the dough also improves the flavor of your cookies.

Baking Cookies

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

Using a 1 1/4-inch cookie scoop or a tablespoon, drop cookie dough 2 inches apart onto prepared baking sheet. Bake in preheated oven until lightly golden, 8 to 10 minutes.

Cool cookies on baking sheet on a wire rack 5 minutes; transfer cookies to wire rack, and cool completely, about 30 minutes.

Store cookies in some wax paper in a container with a tight lid. Cookies can store from 8-10 days.
