Pork chops plated with a sublime honey dijon sauce made by bringing together shallots, honey mustard dressing and sour cream.

With this handful of simple ingredients, you can have a plate of deliciously sweet and flavorful Honey Dijon Pork Chops.
Honey Dijon Pork Chops
Making The Dressing
1/3 cup olive oil
3 tablespoons honey
3 tablespoons apple cider vinegar
1 tablespoon dijon mustard
pinch of salt
Place all ingredients in a emulsion salad dressing maker (salad dressing shaker container) or small Marion jar and shake vigorously.
Store in the refrigerator and use within 3 weeks – makes 3/4 cup.
Making The Pork Chops
2 pork chops, boneless
1 shallot, finely chopped
1/4 cup honey dijon dressing
2 tablespoons sour cream
Place a large nonstick skillet over medium high heat with a tablespoon of avocado oil.
Season pork chops with salt and proper (both sides).
Add chops and cook until browned and cooked through, 4-5 minutes each side.
Turn off heat and transfer meat to a plate and cover with aluminum foil to keep warm. Remove skillet from heat to cool for 1 minute. Do not wipe clean.
Return skillet stove over medium heat. Add chopped shallot and cook, stirring, until soft, 3-4 minutes. Remove skillet from heat.
Add dressing, sour cream and 2 tablespoons of milk. Whisk until well combined and glossy, 1-2 minutes. Taste and season with salt and black pepper, if needed. Set aside.
Remove foil from chops. Cut pork crosswise into slices. Transfer with a spatula to a dinner plate. Spoon meat with honey Dijon sauce.

Serve remaining sauce on the side for dipping meat and vegetables.
