You don’t need a bone-in, skin-on chicken to get lots of flavor. All you need is a good sear on your chicken, lots of those delicious browned bits at the bottom of the pan mixed with herbs and butter.

1 tablespoon avocado oil

1/2 teaspoon dried rosemary

1/2 teaspoon dried thyme

1/2 teaspoon dried sage

1/2 teaspoon dried parsley

1/2 cup chicken broth

1 tablespoon butter

2-3 tablespoons fresh parsley, chopped for garnishing (optional)

Heat a non-stick skillet over medium high heat. Add avocado oil to coat the skillet (optional to use another high heat oil).

Add chicken breasts. Cook 5 minutes on each side until they are seared and golden. Remove the chicken breast from the skillet to a plate and set a side.

Add the chicken broth and bring to a boil. With a spatula scrape the bits that are at the bottom of the skillet.

Next add herbs and cook, 2 minutes. Add the butter and stir to melt – this will creat a herbed pan sauce.

Add the chicken breast back to skillet and spoon sauce over the chicken breasts.

Sprinkle fresh chopped parsley over tops of chicken breasts (optional). Plate and serve with a side of rice, potatoes, or a salad.
