1 tablespoon white vinegar

Instructions
Step 1: Build the Flavor
Set the Instant Pot to Sauté.
Add the olive oil, onion, and cook for about 4 minutes until softened.

Lock the lid and cook on High Pressure for 12 minutes.
Allow a 10-minute Natural Pressure Release, then carefully release any remaining pressure.
Discard the bay leaf.
Step 3: Finish the Lentils
Stir in the spinach until wilted.
Add the lemon juice.
Season with salt and pepper to taste.
Step 4: Poach the Eggs
Bring a saucepan of water to a gentle simmer.
Add the vinegar.
Crack each egg into a small bowl.

Cook 3 to 4 minutes for a runny yolk.
