Quick and Flavorful Umami Ginger Chicken Lo Mein Made Easy

9 ounce Lo Mein noodles, wheat

1 1/4 pounds chicken thighs, boneless, skinless, finely chopped (about 6 thighs)

1 teaspoon oil

1 cup coleslaw mix

4 scallions, thinly sliced, whites and greens separated

1/2 cup sweet soy glaze

1/2 cup umami ginger sauce

Sesame seeds and Sriracha for garnishing

In a small bowl mix together combined soy and ginger sauce. Set aside.

Bring a medium pot of salted water to boil. Once water is boiling add noodles and cook according to package instructions. Drain and set aside.

While noodles cook, heat a large nonstick skillet with 1 teaspoon of oil over medium-high heat.

When oil just starts to shimmer add chicken meat, coleslaw, scallion whites, and a pinch of salt and black pepper.

Cook stirring occasionally until chicken is cooked through and vegetables are tender, about 4-6 minutes.

Next, add drained noodles, sweet soy glaze, umami ginger sauce and toss to combine. Continue cooking until sauce is warmed through and noodles are well coated, about 1 minute.

If sauce is too thick, it can be thinned out by adding a few teaspoons of water.



Remove skillet from heat. Divide lo mein between shallow bowls. Drizzle with sriracha, a sprinkle of sesame seeds and scallion greens.
