The stalks of baby bok choy are crisp and juicy, providing a refreshing bite similar to celery.
The leaves of baby bok choy can have a hint of peppery bitterness, akin to other cruciferous vegetables like kale or Brussels sprouts. This adds a subtle complexity to the dish.

1 tablespoon sesame oil
2 cups baby bok choy
2 cloves garlic, minced
1 tablespoon soy sauce

Cook’s Notes
The noodles can be any type you have on hand, such as lo mein or udon, or even spaghetti.
They are quickly boiled and tossed with a touch of sesame oil for added flavor.
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, breadcrumbs, egg, green onions, garlic, soy sauce, ginger, salt, and pepper. Mix until well combined.
Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
Bake for 15-20 minutes or until the meatballs are cooked through and golden brown.
Make the Bang Bang Sauce
In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust the heat level by adding more or less sriracha according to your preference.
Cook the Noodles
Cook the noodles according to package instructions. Drain and toss them with sesame oil to prevent sticking.
Stir-fry the Vegetables
In a large pan or wok, heat a little oil over medium heat. Add the garlic and sauté until fragrant.
Add the mixed vegetables and stir-fry for about 3-5 minutes until they are tender-crisp. Stir in the soy sauce.
Combine Everything
Add the cooked noodles to the pan with the bok choy, bang bang sauce and toss to combine.

Gently toss everything together until well coated. Layer chicken meatballs over noodle mixture and garnish with cilantro.

Divide the noodles and meatballs into serving bowls. Garnish with fresh cilantro or green onions if desired.
