A Symphony of Flavors

The journey of the Tomato Ricotta Pesto Spread begins with roasting cherry tomatoes and garlic, a process that unlocks their deep, smoky flavors.

These two ingredients set the stage for a foundation of complex flavors that combines beautifully with the creaminess of ricotta cheese.

Ricotta lends a silky texture and mild flavor that balances the acidity and sweetness of the tomatoes. Like with this Italian-Style Pork And Ricotta Meatballs with A Simple Tomato Sauce.

Tomato Ricotta Pesto Spread

2 cups cherry tomatoes

2 cloves garlic, peeled, smashed

1 cup ricotta cheese

1/2 cup cashew nuts

1/2 cup grated Grana Padano cheese

1 cup fresh basil leaves

Salt and pepper, to taste

1/4 cup extra-virgin olive oil

Preheat your oven to 400 degrees.

Place the cherry tomatoes and garlic cloves on a baking sheet. Drizzle with olive oil and season with a pinch of salt and pepper.

Roast in the oven for about 15-20 minutes, or until the tomatoes are blistered and slightly caramelized, and the garlic is soft. Allow them to cool slightly.

Cook’s Notes

Roasting the garlic with the cherry tomatoes brings out its sweetness and mellows the flavor, adding a wonderful depth to the spread.

In a food processor, add the cashew nuts. Pulse until they are finely chopped.

Add the roasted cherry tomatoes, roasted garlic, fresh basil leaves, ricotta cheese, grated Grana Padano cheese, salt, and pepper to the food processor.

Blend everything together until smooth. Adjust the consistency by adding more olive oil or ricotta, if needed.

Taste the pesto sauce and add more salt and pepper, if necessary.

Transfer the sauce to a bowl or jar. It’s delicious as a spread on sandwiches, toasted bread, a replacement for marinara sauce on pizzas or as a dip for vegetables.

Add more olive oil starting with 1/2 cup to turn the spread into a sauce for pasta dishes.
