Sticky Honey Garlic Chicken
6 chicken thighs, skinless, boneless, chopped into 1/2 inch pieces
salt and ground black pepper for seasoning
2 tablespoons olive oil
½ medium onion, finely chopped
7 cloves garlic, chopped, or to taste
1 cup honey
1/2 cup soy sauce
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/4 cup chopped fresh cilantro
Season chopped chicken pieces and mix.
Heat olive oil in a cast iron skillet over medium-high heat. Add seasoned chicken pieces and cook until oblique in color, about 3 minutes.
Next add onion and garlic; continue cooking until onion and garlic are soft, about 5 to 7 minutes. Remove chicken mixture to a plate.
To the same iron skillet, add the honey, soy sauce, onion and garlic powder. With a wooden spoon stir the ingredients until well mixed. Let honey mixture boil rapidly for 2-3 minutes.
Return the chicken mixture with juices to the skillet and continue cooking, stirring occasionally while honey mixture boils rapidly as liquid is boiled out and honey-soy sauce thickens and coats chicken pieces, about 12-15 minutes.

Spoon sticky chicken onto a serving platter with cooked white basmati or long grain rice. Top with sesame seeds, cilantro and serve.
