Cajun Chicken Thighs With Garlic Butter Rice

There are several types of Cajun cooking methods. And pan-broiling or pan-frying is one of them.

This Cajun style dish is an easy pan-frying boneless skinless chicken thigh recipe. It’s so flavorful and ready in 20 minutes.

This chicken thigh recipe is accompanied by a Garlic Butter Rice. It can be made on the stovetop or using your Instant Pot. Recipe follows.

Garlic Butter Rice

1 ½ cups long grain rice

2 ½ cups chicken stock – Find recipe HRRE

1 tablespoon olive oil

1 tablespoon garlic cloves chopped (about 3 medium cloves)

2 tablespoons butter

¼ cup fresh curly parsley, chopped finely

Salt to taste

Rinse the rice until the water runs clear, drain off water and set aside.

In The Instant Pot

Set your Instant Pot to Sauté – High – 10 minutes – Push Start.

When the inner pot has warmed, add the olive oil and leave until hot. Add chopped garlic and sauté until soft, about 2-3 minutes. Next, add butter and swirl until melted.

Add the rice and toast for 2 minutes, stirring constantly so it doesn’t stick to the inner pot.

Cancel Sauté Mode. Pour chicken stock into the inner pot and mix well with the rice. Add salt to taste and place the lid on the Instant Pot and turn to lock. Make sure the release valve is close.

Next, push Custom Mode – High – 12 minutes – Natural Steam Release 10 minutes – Then open steam release valve to release any remaining pressure.

Add the 1/4 cup chopped parsley and mix in. Spoon cooked rice in too a serving bowl.

Stovetop

Place a large skillet over medium high heat and follow the cooking steps of the Instant Pot adding the olive oil, garlic, butter, to the large skillet at the appropriate time and cooking the minutes required.

When you have added the chicken stock, mix in with rice, and place the lid over the skillet. Continue to cook on low heat for 20 minutes.

When rice is cooked, add the 1/4 cup chopped parsley and mix in. Spoon cooked rice in too a serving bowl.

Cajun Chicken Thighs

1 tablespoon homemade Cajun seasoning substitute with low salt store-bought Cajun seasoning

6 Boneless skinless chicken thighs

2 tablespoon unsalted butter

1 tablespoon vegetable oil

Salt to taste

2 tablespoon fresh parsley chopped

Prep the chicken thighs by taking out any unwanted visible fat and pat the chicken dry with a kitchen towel. This way, the seasoning sticks on the chicken, more importantly, dry chicken means less splatter once it hits the hot oil.

Season the chicken with salt, then add the cajun seasoning. Mix together so that the chicken is well coated.

Place a skillet on medium-high heat, then heat up vegetable oil and butter until hot and butter melted.

Carefully add the chicken to the pan and sear for about 5 -7 minutes on each side until the chicken thigh is golden brown and charred throughout.



Add chopped parsley to the chicken and mix it around the pan for another minute. Take the chicken off the heat and rest for about 5 minutes before serving with the Garlic Butter Rice.
