Herbs De Provence Baby Roasted Potatoes

A trio of baby potatoes with primary colors of nature have never tasted better than with this Herbs De Provence Baby Roasted Potatoes.

Herbes de Provence is a classic herb blend using fresh or dried herbs. It’s very popular in the Mediterranean South of France, it is used to season everything, from soups to grilled chicken and including this recipe.



The dried herb mixture consists of thyme, savory, oregano, rosemary, marjoram, and parsley. Some mixtures will contain culinary lavender buds.

Baby Potatoes

These trio of baby potatoes are also know as New Potatoes. These small potatoes are such, as commercial farmers will sometimes harvest potatoes early to make room for other potatoes to grow to mature size underground.

These early harvested potatoes yield a unique taste and texture. They have softer, thinner skins and a higher moisture content. They’re also lower in starch than mature potatoes.

Now get ready to prepare a side dish of Herbs De Provence Baby Roasted Potatoes with soft skins full of herby flavor and interiors that are fluffy and creamy.

Herbs De Provence Baby Roasted Potatoes

2 pounds young potatoes, mixture of yellow, red, purple

2 tablespoons olive oil

1 teaspoon herbs de Provence

1/8 teaspoon salt

2 tablespoons fresh curly parsley, finely chopped

Preheat oven to 400 degrees.

In a large bowl add baby potatoes. Next, add olive oil, herbs de Provence and salt. With a wooden spoon, mix until potatoes are well coated.

Spread potatoes evenly over a baking sheet. Roast in preheated oven for 25-30 minutes, or until the potatoes can easily be pierced with a fork and the skins are crispy. Toss with fresh parsley. Serve hot.
