Oven Baked Greek Chicken Thighs

Oven Baked Greek Chicken Thighs are a super quick and easy weeknight dinner. The chicken thighs are baked to perfection with simple ingredients.

Most Greek chicken recipes use Greek seasoning to marinate the meat. Like with this Greek Grilled Chicken.



But this recipe uses Herbs de Providence. Add that herb mix to Greek yogurt, lemon juice, zest, and garlic to form a marinade, that makes baked chicken thighs that are full of savory but tangy flavor with a subtle sweetness.

As with Greek seasoning the same with Herbs de Providence, the selection of herbs in each mix can change according to who is cooking in the kitchen.

Oven Baked Greek Chicken Thighs

1 1/2 pounds chicken thighs, boneless, skinless

For The Marinade

½ cup Greek yogurt, plain, full fat

¼ cup olive oil

zest of one lemon

⅓ cup lemon juice

4-5 garlic cloves, minced

2 tablespoons Herbs de Providence

1 teaspoon Himalayan salt

½ teaspoon black pepper

Whisk together ingredients for marinade. Toss chicken in marinade to fully coat. Allow to sit for at least 15 minutes, or keep in the refrigerator for longer, up to overnight.

When ready to cook, preheat oven to 425 degrees.

Line a baking sheet with foil for easy cleanup. Arrange chicken on baking sheet in a single layer.

Bake for 20-25 minutes, or until cooked through.
