
This One Skillet Tortellini With Pizza Sauce & Fontina is a delicious and easy to make weeknight meal that’s loaded with awesome pizza flavored sauce that your whole family will love.
Everything is prepared in one skillet then put under the broiler to melt the Fontina cheese. It will taste as if you ordered out for a pizza, but without the crust.
To get that homemade pizza flavored sauce, you need plum tomatoes, they are the top choice for making pizza sauce!

Plum Tomatoes – Also Known As A Roma, San Marzano Or Italian Cooking Tomato
Plum tomatoes are long, plum-shaped, dense tomatoes grown specifically for making tomato sauce.
One Skillet Tortellini With Pizza Sauce & Fontina
2 10 ounce packages tortellini
1/2 cup fresh water
4 tablespoons olive oil, divided
4 plum tomatoes, cored, finely chopped
2 teaspoons minced garlic
2 8 ounce cans tomato paste
2 teaspoon Italian seasoning
2 tablespoons butter
1 teaspoon sugar
4 ounces fontina cheese, shredded
Preheat broiler with rack in the top position.
Heat 2 tablespoons of oil in a medium heat proof skillet over medium-high heat. Add tortellini in an even layer and cook, without stirring, until golden brown on the bottom, about 1 to 2 minutes.
Next, carefully add the 1/2 cup water and immediately cover, cook until tender, about 5 minutes (add 1/4 cup water, if needed). Remove from heat, spoon tortellini to a plate and set aside.
Heat 2 tablespoons of oil and same skillet over medium heat. Add minced garlic, Italian seasoning, cook until fragrant, about 1 to 2 minutes.
Next, add chopped tomatoes and tomato paste with 2 tablespoons of water, cook over medium-high, stirring occasionally, until tomatoes are softened, about 4-5 minutes.
Remove skillet from heat. Stir in the butter and sugar until combined. Season with salt and pepper to taste.

Why add butter and sugar to this pizza sauce?
Tomatoes are extremely acidic, but butter neutralizes their acidity, and sugar helps to balance it as well.
Butter also helps to create a smooth, creamy texture, balances out the flavors and enhances the aroma of the tomato sauce or in this case the pizza sauce.

Sugar is frequently added to enhance the tomatoes’ natural sweetness and add depth to the flavor and to thicken the sauce.
Return cooked Tortellini to skillet of tomato sauce and mix in. Add an even layer of Fontana cheese over top of pasta mixture.
Place heat proof skillet under broiler until cheese has melted and lightly caramelized.

Remove from broiler and let tortellini set for 5 minutes before serving.
