Apple Toffee Pecan Blondie Bars

2 large eggs

1/2 cup sugar

1/2 cup brown sugar, packed

2 teaspoons vanilla extract

1/2 cup unsalted butter, melted

2 fuji or gala apples, peeled, cored, chopped (makes about 3 cups)

1 cup flour

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup pecans, chopped

1 cup English toffee bits

Preheat oven to 350 degrees

Brush with butter a 8×8 inch baking pan.

In a large bowl blend together eggs, sugar, brown sugar, vanilla, and butter and apples and mix in well.

In a second bowl sift together flour, salt, cinnamon and nutmeg.

Whisk the dry ingredients into the wet ingredients until just combined.

Pour into baking dish and spread evenly. Mix together toffee bites and chopped pecans. Sprinkle evenly over cake batter.

Bake for 35-40 minutes or until a toothpick comes out clean.

Cool completely before cutting into squares and serving.
