Moroccan Orange & Radish Salad With Cinnamon Vinaigrette

A bold refreshing salad that includes sweet juicy oranges, and crisp red radishes, baby spinach and sliced almonds tossed with a light tasting cinnamon vinaigrette.
It’s a simple salad, but it’s equally unique, fresh and so delicious.
This salad is good eating on its own, or as a lunch or dinner entree with the addition of a protein, like beef or chicken.

Moroccan Orange & Radish Salad With Cinnamon Vinaigrette
Vinaigrette
1/3 cup olive oil
1/4 cup lemon juice
2 tablespoons orange juice
2 1/2 teaspoons sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
Mix all ingredients in a small bowl with wire whisk until well blended. Set aside.
Salad
3 Cara Cara oranges, peeled and thinly sliced – can use blood orange or navels
2 bunches of radishes, thinly sliced (about 1 cup)
1 package (6 ounces) baby spinach
1/4 cup sliced almonds, lightly toasted
Toss all ingredients, except almonds, in large salad bowl.

Just before serving, toss salad with 1/2 of the vinaigrette. Sprinkle with almonds. Serve with remaining vinaigrette.
