Chicken Avocado and Watercress Salad With A Sweet Onion and Apple Vinaigrette
For The Salad
1 1/2 cups rotisserie chicken, cut off meat in chunks
4 cups Upland cress, washed and dried
1 cup mango chunks
1 medium avocado, firm, but ripe avocado, pitted, skin removed, slice
Salt and black pepper, to taste

For The Sweet Onion and Apple Vinaigrette
1/2 cup rice vinegar
1 tablespoon grated sweet onion
1/4 cup Gala or Fiji apple, peeled, core and seeds removed, finely grated
4 teaspoons soy sauce
1 teaspoon sugar
3 tablespoons avocado oil
When grating the onions and apples use the small holes of the grater. Alternatively, use a microplane.
Mix all vinaigrette ingredients in a small bowl and set aside.
Divide the watercress between two large plates. Next top 1/2 cup mango chunks over watercress, followed by 3/4 cup chicken and half of the avocado slices. Next spoon 3-4 tablespoons (or desired amount) of the vinaigrette.
