Hearty Skillet Meatballs with Beef, Chorizo & Ricotta
Serves: 4–6
Prep Time: 15 minutes
Cook Time: 30–35 minutes
Total Time: ~45–50 minutes
Meatballs
1 lb ground beef
½ lb Mexican chorizo
¾ cup ricotta cheese
½ cup breadcrumbs
1 large egg
¼ cup grated Parmesan
3 cloves garlic, minced
1 tsp onion powder
1 tsp dried oregano
1 tsp dried basil
½ tsp smoked paprika (optional)
½–¾ tsp salt ½ tsp black pepper
Olive oil for browning
Simple Tomato Sauce
1 (28 oz) can crushed tomatoes
1–2 tbsp tomato paste
2 cloves garlic, minced or thinly sliced
1 tbsp olive oil
½ tsp dried oregano
Salt & pepper to taste
¼–½ cup water if needed
Topping
1–1½ cups shredded cheese (cheddar or Monterey Jack)
Combine beef, chorizo, ricotta, breadcrumbs, egg, Parmesan, garlic, and seasonings in a mixing bowl. Mix gently and form into 2–2½ inch meatballs.
Heat oil in a large oven-safe skillet over medium-high and brown the meatballs on all sides, 5–7 minutes. Drain excess grease if needed.
Make the Tomato Sauce
Add garlic to the skillet and sauté briefly. Stir in crushed tomatoes, tomato paste, oregano, salt, and pepper. Thin with water only if needed.

Nestle meatballs back into the sauce and simmer 10 minutes. Sprinkle cheese over the meatballs.
Stovetop: Cover and cook for 5 minutes
Oven: Bake at 400°F for 8–10 minutes until bubbly and lightly browned.
