Garlic Parmesan Chicken

3 large chicken breasts, boneless, skinless, chopped into bite sized pieces, about 1/2 inch

4 tablespoons all-purpose flour

4 tablespoons Parmesan cheese, finely grated

2 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon black pepper

For The Sauce:

5 tablespoons olive oil

2 tablespoons butter

1 small onion, finely chopped

1 Whole head garlic (about 10-12 cloves) peeled, smashed 6 cloves, leaving the other 6 whole

1 1/4 cup chicken stock

1 1/4 cup heavy cream 

1/2 cup Parmesan cheese, finely grated

2 tablespoons fresh parsley, to serve (can sub 1 teaspoon dried parsley)

Season the chopped chicken pieces with salt, garlic powder and black pepper.

In a shallow bowl, combine the flour and parmesan cheese. Add the seasoned chicken pieces to the flour mixture. Mix until chicken is well coated.

Heat 2 tablespoons of oil and 1 tablespoon butter in a large skillet over medium-high heat. Swirl pan to coat evenly. 

Add chopped chicken and cook stirring occasionally until all sides of chicken pieces are golden brown, about 5-7 minutes. Transfer cooked meat to a plate. Set aside.

Reduce heat to medium. Add remaining oil. Next add the onions and sauté until softened.

Next, add smashed garlic cloves and whole garlic cloves and continue cooking, stirring occasionally until garlic is fragrant, about 2-3 minutes.

Add the stock to deglaze the pan. Scrape up any browned bits and let simmer and reduce to half, about 5 minutes.

Reduce heat to medium-low. Pour in the cream. Bring the sauce to a gentle simmer for about 2-3 minutes, allowing for flavors to develop and combine.

Mix in the parmesan cheese. Continue cooking gently for about 2-3 minutes until cheese melts, while stirring occasionally. Season with salt and pepper to taste. 

Add the cooked chicken pieces back into the skillet mix in and let simmer in the cheese sauce until it begins to thicken to your liking, about 5 minutes.



Plate some cooked penne pasta on a serving platter. Spoon Garlic Parmesan Chicken evenly over pasta. Garnish with parsley and serve.
