Hot Honey Grilled Cheese With Apple Cheddar and Candied Bacon
Herb Butter
4 tablespoons unsalted butter, softened
1 teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
Pinch of sea salt
Place ingredients into a small bowl and mix together until combined well. Set aside.

Candied Bacon
8 strips bacon, thick cut
1/2 cup dark brown sugar
3 tablespoons maple syrup
1/4 teaspoon fresh ground black pepper
Preheat the oven to 375 degrees.
Line a large baking sheet with aluminum foil or parchment paper. Place a wire rack on top to hold the bacon above the surface of the baking sheet.
Mix the brown sugar, maple syrup and black pepper in a large mixing bowl. Mixture will be thick.

Cut the slices of bacon in half. Place bacon slices in bowl and rub bacon into brown sugar mixture until well coated.
Place slices on to wire rack. Place in preheated oven and bake for 25-30 minutes or until bacon is crispy.

Remove from oven and let cool 5 minutes or until bacon has cooled slightly to handle. Place bacon strips on a cutting board and chop. Set aside.
Roasted Apples
1 medium Gala apple, thinly sliced
1 tablespoon extra virgin olive oil
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon dried thyme
Preheat oven to 425 degrees.
Line a baking sheet with parchment paper or foil.
In a medium mixing bowl add olive oil and spices. Mix until combined well. Add slices of apple and mix until slices are well coated either spice mixture.

Add the sliced apples to baking sheet. Place in preheated oven and bake for 15-20 minutes or until tender and juices begin to bubble outside of skin of the apples have wilted and become golden. Remove from oven and let cool.

Grilled Cheese
4 slices sourdough bread
2 cups cheddar cheese, shredded
8 strips candied bacon, chopped
1/4 cup hot honey – Find Recipe HERE
Add cheddar cheese and chopped candied bacon to a large bowl. Using both hands, gently mix together until well combined. Set aside.
Prepare The Sandwich
On one side of each bread slice, spread a bit of the herb butter over entire surface of bread slice.
On opposite side of each slice add a spoonful of hot honey spreading evenly until covered.

On two slices of bread add 1 cup of cheese mixture followed by slices of roasted apples (about 5-6 slices), and a slice of bread, hot honey side down. Repeat until all sandwiches are made.

In a large non-skillet over medium-low heat, add two sandwiches and cook until golden brown and the cheese has melted, about 4-5 minutes. Flip sandwich and continue cooking for another 4-5 minutes.

Once done, cut sandwiches in half and plate with your favorite side.
