1/8 cup packed baby arugula

1/2 cups fresh or frozen blueberries

1 tablespoon balsamic vinegar

1 1/2 tablespoons brown sugar

Preheat oven 300 degrees

In a small saucepan add and combine blueberries, brown sugar and vinegar. Turn on burner to medium heat and let blueberry mixture come to a slow boil.

Use a utensil such as a potato masher to mash berries as you stir. After soft boiling for about 5 minutes, pour mixture into a mesh strainer over a bowl and let the juice syrup separate from the solid berries.
