Avocado Herb Vinaigrette
1 medium ripe avocado, pitted, diced
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 tablespoon raw honey
2 cloves garlic, minced
1/4 cup fresh basil leaves
Salt and pepper to taste
In a blender or food processor, add the avocado, olive oil, lemon juice, red wine vinegar, honey, minced garlic, and basil leaves. Blend until smooth. Season with salt and pepper to taste. Makes 1 cup (8 ounces) of vinaigrette.

Pour the avocado herb vinaigrette over your salad ingredients. Toss gently to ensure all ingredients are coated well.
You can also use the vinaigrette to marinate 2 boneless skinless chicken breasts or 4 chicken thighs.
If you do not use the vinaigrette right away, store in a mason jar with a lid in the refrigerator. Store leftovers as well and use within 6-7 days.
