Flavorful Fusion: Grilled Chicken Salad with Pomegranate and Citrus

The chicken marinade 

Using pomegranate molasses in a marinade can add a rich, tangy flavor to your BBQ chicken tenders.

1 1/2 pounds chicken tenders

1/4 cup pomegranate molasses

2 tablespoons olive oil

2 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon honey

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

In a bowl, whisk together the pomegranate molasses, olive oil, soy sauce, minced garlic, honey, cumin, smoked paprika, salt, and pepper until well combined.

Place the chicken tenders in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour.

Grilling The Marinated Chicken

When ready to cook, preheat your grill to medium-high heat, about 350-375 degrees.

In a small bowl, mix together the sugar and orange zest. Set aside.



Heat the orange to a simmer on the stove top or alternatively in the microwave. When juice is heated add the cranberries and set aside.

To a medium mixing bowl, add the chopped chicken, mayonnaise, hydrated cranberries (without orange juice) orange zest sugar, almonds, cilantro and mix until well incorporated.
