Linguine With Chunky Tomato Mascarpone Pasta Sauce

12 ounce linguine

2 tablespoons olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 can (14 oz) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon sugar

Salt and pepper to taste

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 cup mascarpone cheese

1/3 cup grated Parmesan cheese

Fresh basil leaves for garnishing

Add 1 teaspoon salt to large pot of water and bring to a boil. Add the linguine and cook according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until it becomes translucent, about 3-4 minutes.

Next, add the minced garlic and sauté for another 1-2 minutes, until fragrant.

Stir in the crushed tomatoes and tomato paste. Mix well to combine.

Add the sugar, salt, pepper, oregano, basil and stir in till mixed. Let the sauce simmer for about 10 minutes, allowing the sauce to thicken and the flavors to meld.

Reduce the heat to low and add the mascarpone cheese. Stir until the cheese is fully melted and incorporated into the sauce, creating a creamy texture.

Stir in the grated Parmesan cheese until well mixed.



Next, add the cooked linguine to the skillet, tossing it with the sauce until the pasta is well coated.

Transfer the pasta to a serving platter and garnish with fresh basil leaves, if desired.
