Zesty Chipotle Lime Shrimp Kabobs

If you’re on the hunt for a dish that perfectly combines vibrant flavors with the thrill of grilling, look no further than Chipotle Lime Shrimp Kabobs.

This exquisite dish not only captures the essence of outdoor cooking but also brings a delightful fusion of spices and citrus that will tantalize your taste buds.

Grilling not only infuses the shrimp with a charred smokiness but also locks in the flavors, ensuring that every bite is succulent and juicy.

Chipotle Lime Shrimp Kabobs find their roots in the fusion of Southwestern and Mexican cuisines. Like this Tortellini Primavera with Cajun Shrimp, a fusion of Italian and Cajun Cuisine.

The use of chipotle peppers (made from jalapeño’s) known for their smoky and spicy profile, adds a distinct Southwestern flair, while the lime brings a zesty Mexican touch.

This combination results in a dish that is both bold and refreshing, capturing the essence of two culinary worlds.

Zesty Chipotle Lime Shrimp Kabobs

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons lime juice (about 1 lime)

1 tablespoon chipotle chili powder

2 cloves garlic, minced

Salt and pepper to taste

Lime wedges, for serving

Skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

In a large bowl, whisk together the olive oil, lime juice, chipotle chili powder, minced garlic, salt, and pepper.

Cook’s Notes

Adjust the amount of chipotle chili powder to your taste preference if you want it spicier or milder.

Add the shrimp to the bowl with the marinade. Toss to coat the shrimp evenly. Cover and refrigerate for at least 15 minutes, but no more than 2 hours, as the lime juice can start to “cook” the shrimp.

Preheat your grill to medium-high heat (350 degrees).

Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.

Place the skewers on the grill. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.

Remove the shrimp from the grill and transfer them to a serving platter. Serve kabobs with lime wedges.
