Zesty Chipotle Lime Shrimp Kabobs
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
2 tablespoons lime juice (about 1 lime)
1 tablespoon chipotle chili powder
2 cloves garlic, minced
Salt and pepper to taste
Lime wedges, for serving
Skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)
In a large bowl, whisk together the olive oil, lime juice, chipotle chili powder, minced garlic, salt, and pepper.
Cook’s Notes
Adjust the amount of chipotle chili powder to your taste preference if you want it spicier or milder.
Add the shrimp to the bowl with the marinade. Toss to coat the shrimp evenly. Cover and refrigerate for at least 15 minutes, but no more than 2 hours, as the lime juice can start to “cook” the shrimp.
Preheat your grill to medium-high heat (350 degrees).
Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.
Place the skewers on the grill. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.

Remove the shrimp from the grill and transfer them to a serving platter. Serve kabobs with lime wedges.
