Before you get started, here are some tips for the Perfect French Toast.

Brioche Bread

The choice of brioche is key for this recipe. Its soft, buttery texture soaks up the egg mixture beautifully, giving you that perfect, fluffy French toast.

Pudding Consistency

Ensure your vanilla pudding is not too runny. A thicker pudding will hold the berries in place and prevent them from sliding out.

A word of caution, whisk the mixture continuously. As the pudding starts to thicken, remove from heat. Otherwise, the pudding could start to burn.

For The Vanilla Pudding

2 large egg yolks

¼ cup sugar

2 tablespoons cornstarch

1 cup whole milk

Pinch of coarse salt

For The French Toast

2 tablespoons unsalted butter, if using a skillet

1 loaf of brioche, trimmed of crusts

2 cups mixed fresh berries, room temperature

3 large eggs

6 tablespoons whole milk

1 1/2 tablespoons sugar

1 1/2 teaspoons pure vanilla extract

1/2 teaspoon ground cinnamon

1 cup pure maple syrup, for serving

To make the vanilla filling: In a medium, heat-proof bowl, whisk together the egg yolks, 2 tablespoons of the sugar, the corn-starch, and ½ cup of the milk.

In a medium saucepan, combine the remaining 2 tablespoons sugar, the remaining ½ cup milk, and the salt. Bring to a simmer.

Whisking constantly, gradually pour the hot milk into the egg mixture to temper. Set a strainer over the saucepan.

Strain the custard mixture back into the saucepan and bring to a boil over medium heat, whisking constantly. Boil for 10 seconds, whisking.


Cook’s Notes

Make sure the custard boils for 10 seconds in the center of the pan, not just around the sides.


The mixture should thicken to a pudding-like consistency. Remove from the heat and transfer to a clean medium bowl.

Whisk for a few minutes until cooled. Add the vanilla extract and butter. Whisk until the butter has melted. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate until chilled, 1 to 2 hours.

Make The French Toast

In a small saucepan, beat syrup over medium heat until warm, 3 to 5 minutes. Transfer to a serving pitcher. Set aside.

In a large pie plate, whisk the eggs, milk, sugar, vanilla, and cinnamon until blended. Set aside.

Spread 4 of the brioche slices with 2 generous tablespoons of pudding each. Arrange about 1/4 cup of the berries on top of 2 slices in a single layer. Top with another slice of bread and press gently to adhere.

Dip both sides of each sandwich quickly into the egg mixture, allowing excess to drip off.

Place directly in the skillet and cook until golden brown on one side, 4 to 5 minutes. Flip and cook until the second side is golden brown and the filling is warmed through, 4 to 5 minutes.



Serve with the rest of the berries and the warm maple syrup.
