Tuscan Sheet Pan Gnocchi And Sun-Dried Tomatoes

1 (8.5-ounce) jar  oil-packed marinated sun-dried tomatoes, julienne style, oil drained off

1 pound fresh, shelf-stable, or frozen potato gnocchi

2 tablespoons olive oil

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

5 ounces baby spinach (about 5 cups packed)

Grated Parmesan cheese, for serving (optional)

Arrange a rack in the middle of the oven and heat to 400 degrees.

Add to a large bowl the gnocchi, sun-dried tomatoes, 2 tablespoons olive oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper, and toss well to combine.

Spread gnocchi mixture over a rimmed baking sheet in an even layer. Place sheet pan in preheated oven and roast 18 to 20 minutes, stirring halfway through.

Remove from the oven, scatter spinach over the gnocchi, and toss gently.
