Grilled Cheese Pastrami With Avocado Shallots And Red Roasted Pepper Sandwich
2 slices of bread, sourdough, rye, or whole grain
1/2 pound sliced pastrami
1 medium shallot, thinly sliced, horizontally
1 cup roasted red pepper strips, if using jarred drain peppers
6 slices pepper jack cheese, can opt for Swiss, Gruyère, or provolone
1 medium ripe avocado, pitted
2 tablespoons (heaping) sour cream – we prefer Tillamook brand, cultured and a thick consistency
1/4 teaspoon dried basil
1/4 teaspoon granulated garlic
1/2 cup Parmesan cheese
1/2 cup (1stick) butter, unsalted
Salt and pepper to taste
Place a medium nonstick skillet over medium heat. Add a tablespoon of butter. When it starts to sizzle add prepared shallot and sauté.
When you smell the aroma of the onion add the 1/4 teaspoon each of dried basil and granulated garlic, mix in and continue sautéing 1 minute more.
Using a slotted spoon, remove cooked shallots from skillet and add to roasted red peppers and mix well together. Set aside.
In a medium bowl add avocado, sour cream, 1/4 teaspoon each salt, black pepper, powdered garlic and mix well. Set aside.
Assembling The Sandwich
Spread a thin layer of butter on one side of each slice of bread. Sprinkle with Parmesan cheese.
On one slice of bread (buttered/cheese side down), spread 2-3 teaspoons of avocado spread, 1-2 teaspoons red pepper/shallot mix, 1 slice of cheese, 6-7 slices pastrami, followed by another slice of cheese.
Spread avocado on second slice of bread and place over meat.
Grilling The Sandwich
Turn broil to high and position rack in center position.
Place a nonstick skillet over medium heat. Carefully place the sandwich on the heated skillet.
Cook for 3-4 minutes on each side, pressing down gently with a spatula until golden brown and the cheese begins to melt.
Place sandwiches onto a baking sheet and place into oven for 2-3 minutes so cheese is melted thoroughly.

Remove the baking try from the oven. Let sandwiches rest for a minute before slicing in half.
For a gourmet touch, serve with a bowl of soup or a coleslaw.

Thanks for reposting. I liked grilled cheese sandwiches when I was a kid. Then as a teen I began to dislike the typical white bread and American cheese slices. But later as an adult, when cultures have now come together inventing old recipes into new ones with new ingredients. I really like this grilled cheese as well –
