One-Skillet Creamy Cajun Chicken Pasta

Pasta comes in many appealing shapes and sizes, and one of the most delightful is Campanella.

The pastas name in Italian means “Bellflowers.” The pasta is delicate with a sturdy shape. It has fluted, petal-like edges and a hollow center for capturing sauce.



And that’s exactly what you need with this One-Skillet Creamy Cajun Chicken Pasta.

You can’t go wrong with a one-skillet meal that’s easy to make. A chicken pasta dish with Campanelle pasta, tender bites of cajun chicken, tossed in a rich creamy mascarpone Parmesan cheese sauce.



One-Skillet Creamy Cajun Chicken Pasta

1 lb boneless skinless chicken thighs

8 ounces Campanelle pasta

1 ½ tablespoons cajun seasoning, divided

1/2 cup mascarpone

2 tablespoons olive oil

½ cup freshly grated parmesan cheese

2 tablespoons butter

½ cup yellow onion, finely chopped

½ tablespoon garlic, minced

1/8 cup dried chives or 1/3 cup chopped green onions

½ cup milk

1/2 cup pasta water

Salt and black pepper to taste

Cut the chicken thighs into bite sized pieces, about 1/2-inch pieces. Place into a large bowl. Season with salt, pepper and 1 tablespoon cajun spice, stir to combine, and set aside.

Cook pasta according to package instructions. When pasta is done, reserve about 1 cup of the pasta water.

While the pasta is cooking….

Heat olive oil in a large skillet over medium-high heat, add chicken pieces and cook, stirring frequently until white and no longer pink. Remove the cooked chicken from the skillet to a plate and set aside.

To the same skillet over medium high heat, add butter, chopped onions, and garlic and saute until soft for about 30-60 seconds.

Lower heat to medium and add milk, mascarpone, parmesan cheese, 1/2 tablespoon cajun spice, and pasta water, to the sauteed aromatics and stir until combined and creamy. Season with salt and pepper accordingly. Continue cooking for 2-3 minutes.

Next, add pasta and meat with its resting juices and mix in well, making sure pasta and meat are well coated with cream sauce. Add dried chives or green onions, if using and mix in.



Plate and serve with more grated Parmesan cheese and dried chives.
