Lavender Infused Orange Vinaigrette

This lavender infused orange vinaigrette is not just made for dressing a salad, as it pairs well with a variety of dishes such as roasted vegetables, like this Herbs De Provence Baby Roasted Potatoes or grilled chicken.

This recipe uses culinary lavender to infuse the olive oil to make the vinaigrette. What makes lavender culinary or eatable?

The term ‘culinary lavender’ refers to the cultivar or type of lavender and the way it’s processed.

Some lavender cultivars are better than others when it comes to cooking.

Two cultivars of lavender are eatable. These include – L. angustifolia and L. x. intermedia.

The later is less desirable as its flavor can be resinous and pungent. Making a dish taste bitter.

Whereas, the L. angustifolia had 7 types of culinary lavender that range in flavor from peppery to earthy and cinnamony to sweet and floral.

Culinary lavender is versatile. As noted early on, you can roast or grill with it. You can also bake with the flower buds, such as these Lavender Rosemary Shortbread Cookies.
