This Cilantro Lime vinaigrette is one such versatility and combination.
It is a zesty homemade Mexican inspired salad dressing. It’s perfect on salads, mixed into a cabbage, carrot or broccoli slaw and as a marinade.
The vinaigrette features lime juice, fresh cilantro, ground coriander, garlic and a touch of sweet raw honey.

Cilantro Lime Vinaigrette
2 limes, freshly squeezed
1 cup fresh cilantro
1 garlic clove
1/2 tsp. ground coriander
1 tsp. honey
1/2 tsp. salt
1/2 cup olive oil
Place first six ingredients into a blender. Pulse until well combined. Continue pulsing while drizzling in olive oil.
Alternatively, place first six ingredients into a small mason jar and blend with a hand immersion blender. When combined, add oil and continue to blend.

Store the vinaigrette in the refrigerator in a mason jar with a tight lid for up to two weeks.
