Cilantro Lime Vinaigrette

Cilantro is a green herb that is rising to popularity in the United States. Among several reasons, one being the growth of Mexican and Asian cuisines, both of which utilize the herb heavily.

Cilantro is very versatile and makes a delicious flavor combination with lime.

This Cilantro Lime vinaigrette is one such versatility and combination.

It is a zesty homemade Mexican inspired salad dressing. It’s perfect on salads, mixed into a cabbage, carrot or broccoli slaw and as a marinade.

The vinaigrette features lime juice, fresh cilantro, ground coriander, garlic and a touch of sweet raw honey.

This vinaigrette makes a great topping to any of your favorite Mexican dishes, such as rice or tacos. Like these Chorizo Potato Tacos.




Cilantro Lime Vinaigrette

2 limes, freshly squeezed

1 cup fresh cilantro

1 garlic clove

1/2 tsp. ground coriander

1 tsp. honey

1/2 tsp. salt

1/2 cup olive oil

Place first six ingredients into a blender. Pulse until well combined. Continue pulsing while drizzling in olive oil.

Alternatively, place first six ingredients into a small mason jar and blend with a hand immersion blender. When combined, add oil and continue to blend.



Store the vinaigrette in the refrigerator in a mason jar with a tight lid for up to two weeks.
