
Chicken curry is a dish originating from the Indian subcontinent. Not only is it a popular dish in Southeast Asia, but also both England and the Caribbean.
A typical curry dish from the Indian subcontinent is made with an onion and tomato based sauce and including ginger, garlic, chili peppers and a variety of spices which includes turmeric, cumin, coriander, cinnamon, and cardamom.
Indian cuisine has a large amount of regional variations when it comes to chicken curry. South India, coconut and curry leaves are also common ingredients.
Outside of South Asia though, chicken curry is most often made with a pre-made spice mixture known as curry powder.
The truth is, chicken curry is a dish that is famous the world over. And rightly so.
As a result of trade between England and India this dish was introduced to the rest of the world and each country has adopted as a dish of their own.
And because of the love for curry, there are a lot of variations of the dish. And Chicken Curry With Dried Cherries is one of those variations.
Chicken Curry Salad With Dried Cherries
3/4 pound skinless, boneless chicken thighs, cut into 1-inch chunks
1 tablespoon plus 1 teaspoon avocado oil
1 small red or purple onion, thinly sliced
2 ribs celery, sliced
1/2 cup chicken broth
1/3 cup chopped dried tart cherries
1 1/2 teaspoons curry powder
1/2 to 1 teaspoon Himalayan Salt (optional)
1/2 teaspoon black pepper
1/3 cup coconut milk
2 tablespoons flour

In a large ceramic coated skillet or cast iron skillet, heat 1 tablespoon of avocado oil over medium-high heat.
Add the chicken and cook, stir occasionally until meat is oblique colored and just cooked through, about 5 minutes. Transfer the chicken to a plate, and set aside.

To the same pan add the 1 teaspoon of avocado oil and heat over medium-high heat. Add the onion and sliced celery and cook, stirring for 3 minutes.

Next add the cherries and 1/2 cup chicken broth and bring to a light boil. Next stir in the curry powder, coconut milk, salt and pepper.

Next add the cooked chicken along with any juices and mix in.

Plate and serve over rice or enjoy as is.
