4 small sweet potato, baked

1 (15 oz) can black beans, rinsed and drained

1 cup frozen corn, thawed (can opt for 1 cup canned corn, rinsed, drained)

3 green onions, thinly sliced

1/2 cup cilantro, chopped

For The Vinaigrette

2 limes, zested and juiced

1 tablespoon coconut oil

2 teaspoons raw honey

2 teaspoons adobe sauce (from a can of chipotles in adobo)
