Southwestern Style Mac & Cheese - Gluten-free

This Mac & Cheese is no ordinary recipe as ingredients that kick up the flavor are added to creat a deliciously yummy Southwestern vibe.

This Southwestern-Style dish features ingredients loved in all cultures: cheese, pasta, corn, bacon and chili peppers.

Traditional macaroni and cheese is a casserole baked in the oven. Though it can be prepared in a sauce pan on top of the stove, in an Instant Pot or using a packaged mix.

Mac & Cheese is a favorite food eaten widespread across the United Kingdom, United States, and Canada.

Southwestern Style Mac & Cheese

8 ounces gluten-free penne pasta

2 tablespoons unsalted butter

1/2 teaspoon salt

1 12-ounce can evaporated milk

2 cups Mexican cheese mix

1 15-ounce can corn

8 thick cut strips smoked bacon, stacked and cut diagonally 4-5 times

1 medium Anaheim or Hatch chili, seeded, deveined, diced

Heat a medium skillet over medium heat. Add chopped bacon snd cook just until starting to crisp.

Remove from heat and spoon cooked bacon and fat to a plate and set aside.

Cook pasta according to package instructions.

While pasta cooks, prepare chili. Set aside.

When pasta is done, add cheese, evaporated milk and mix in. Next add corn, bacon and chilies. Mix in to combine.
