1 cup pearled farro

1 ½ pounds sweet potatoes, peeled and diced into 1-inch pieces

2 tablespoons olive oil

1 teaspoons dried oregano

1 teaspoon smoked paprika

¼-½ teaspoon Aleppo pepper

½ cup thinly sliced shallot

1 bunch kale, stemmed and chopped

¼ cup crumbled goat cheese

Cooking Instructions

Preheat the oven to 425 degrees.

Cook farro according to package instructions. Drain and transfer to a serving platter or bowl. Drizzle with a little olive oil to keep grains moist.

While the farro cooks, to a large bowl add sweet potatoes, 2 tablespoons olive oil, oregano, paprika, chili and ½ teaspoon kosher salt and toss to coat evenly with the spices.

Spread sweet potatoes in an even layer on a large rimmed sheet pan. Roast in preheated oven for 15 minutes. 

Remove sheet pan from oven and add the sliced shallots and gently toss with sweet potatoes until the evenly distributed.

Place sheet pan back into oven and continue roasting 5-10 more minutes. Transfer the sweet potatoes to the platter with the farro.

On the same sheet pan arrange the chopped kale and drizzle with a little olive oil and sprinkle with salt. Return to oven and roast for 5 minutes, until the leaves are wilted and the edges are beginning to crisp.



Add the kale to the sweet potatoes and farro. Pour the dressing over and toss well. Sprinkle the cheese on top with tahini dressing and serve warm or at room temperature.
