Cherry Shallot Glazed Pork Chops

6 pork chops (bone-in or boneless, about 1-inch thick)

Salt & freshly ground black pepper, to taste

2 tablespoons olive oil, for searing

2 shallots, thinly sliced

1 cup cherry jam

1 1/2 tablespoons red wine vinegar

1 cup chicken stock (low-sodium preferred)

1 tablespoon butter (for finishing glaze)

Optional: fresh thyme or rosemary for garnish

Heat oven to 375 degrees.

Pat the chops dry with paper towels. Season both sides generously with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Sear 3 chops at a time for 3-4 minutes per side, until golden brown. Transfer to a plate and repeat with remaining chops.

In the same pan, reduce heat to medium. Add the sliced shallots and sauté for 4-5 minutes, until softened and lightly caramelized.
