Watermelon Goat Cheese And Pistachio Salad With Pomegranate-Lime Dressing

3 cups watermelon, seedless, cubed

3 ounces goat cheese, crumbled

1/2 cup pomegranate arils

1/4 cup pistachios, toasted, roughly chopped

For The Dressing

1 tablespoon fresh thyme leaves (or mint)

1 tablespoon pomegranate molasses

1 teaspoon fresh lime juice + zest

1 tablespoon extra virgin olive oil

salt to taste

Instructions

Build the Base: Arrange watermelon on a platter and sprinkle ⅓ of pomegranate arils directly over melon.
