Southern-Inspired Peach Pecan Bourbon Bread
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1 teaspoon vanilla-bourbon paste
1/3 cup bourbon whiskey
1 ½ cups fresh peaches, peeled and diced
1 cup pecans, chopped
Recipe for the Peach Syrup Glaze to follow
Preheat oven to 350 degrees.
Grease a 9×5-inch loaf pan with butter or non-stick spray. Set aside.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes.
Beat in the eggs, one at a time, until fully incorporated. Stir in the vanilla bourbon paste and bourbon whiskey, mixing well.
Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix.

For The Peach Syrup Glaze
1 cup fresh peaches, peeled and diced, about 3 small peaches (you can also use frozen peaches)
1/2 cup granulated sugar
2 tablespoons water (adjust as needed)
1 teaspoon vanilla bourbon paste
A squeeze of lemon juice
In a saucepan over medium heat, combine the diced peaches, sugar, and water. Mash the peaches lightly to break them down. Cook for 5-10 minutes, stirring occasionally, until the mashed peaches soften and release their juices.
Once the mixture is simmering and slightly thickened, add vanilla-bourbon paste and a squeeze of lemon juice, stir well to combine.
Continue simmering for an additional 2-3 minutes until the glaze has thickened to your desired consistency.

Remove the saucepan from heat and let the glaze cool slightly before drizzling it over your cooled Peach Pecan Bourbon Bread.
