Spicy Peruvian Aji Verde Chicken Bowls

For The Aji Verde Sauce Recipe

1 cup cilantro, leaves and stems

1 jalapeño or serrano peppers, seeds removed OR 1 teaspoon red pepper flakes

2 cloves garlic, minced

1 tablespoon mayonnaise

2 tablespoons fresh lime juice (about one lime)

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Water (to adjust consistency, if needed)

In a blender or food processor, combine the cilantro, peppers, garlic, mayonnaise, lime juice, olive oil, and ground cumin. Blend until you achieve a smooth, creamy consistency.

Taste and season with salt and pepper as needed.

Transfer the aji verde to a bowl and cover tightly. Transfer to the refrigerator to allow flavors to meld while you prepare the chicken.

For The Chicken Breasts

2 chicken breasts, cut into cutlets

Salt and black pepper, for seasoning

2 Roma tomatoes, diced

Red pepper flakes, for garnishing

Adjust oven rack to middle position and to 425 degrees.

Pat chicken dry with paper towels and cut diagonally into cutlets. Season all over with salt and pepper.

Place cutlets on a baking sheet. Place in preheated oven and roast for 15-20 minutes or until chicken is cooked to 165 degrees internally.



Plate cutlets and top with Aji verde sauce, diced tomatoes and a sprinkle of red pepper flakes.
