One-Skillet Pork Chops and Cranberry Shallot Sauce
4 pork chops (bone-in or boneless)
Salt and black pepper, to taste
2 tablespoons olive oil
2 shallots, thinly sliced
2 cloves garlic, minced
1 cup fresh or frozen cranberries
½ cup chicken broth
¼ cup balsamic vinegar
2 tablespoons honey
1 teaspoon fresh thyme leaves
Season the pork chops generously with salt and pepper.
In a large skillet over medium-high heat, heat olive oil. Add the pork chops to the skillet and sear for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside to rest.
