Seattle Dog

The Seattle Dog is a unique take on the traditional hot dog that has secured a special place in Seattle’s culinary scene.

Unlike the East Coast of the United States, where a street dog is often prepared with mustard and sauerkraut, Seattle, Washington, is known for its hot dogs with cream cheese.



The original Seattle Dog was created by bagel dog vendor Hadley Long in 1989. Although this version doesn’t exist anymore due to the bialy-style bun he originally used being unavailable.

But the Seattle Dog has remained a permanent fixture in the city’s food culture. At its simplest, it consists of a hot dog on a bun with cream cheese, mayonnaise, and caramelized onions (recipe follows).

Many Seattle hot dog purveyors have added their own unique twists to this classic, incorporating sauces like sriracha or barbecue sauce, jalapeños, gourmet cheeses, and even special types of buns.

These variations offer a delightful and diverse taste experience, ensuring the Seattle Dog continues to capture the hearts of both your family and friends.

4 beef hot dogs, grilled

4 King’s Hawaiian Original Hawaiian Sweet Hot Dog Buns, or something similar

8 ounces cream cheese, room temperature

1/4 cup (about 2 ounces) goat cheese, room temperature

1/2 teaspoon granulated garlic powder

1 cup hemplers bacon ends and pieces, chopped, cooked

1 cup caramelized onions, recipe follows

1/2 cup Sriracha mayo

1/4 cup marinated chilies, such as banana peppers or jalapeños

Recipe instructions for the Seattle Dog follows, but first let’s caramelize those onions.

Best Onion For Caramelizing

Before we cook the onions, let’s answer a common question – What’s the best onion for caramelizing onions?



Yellow and sweet onions, such as Vidalia and Walla Walla, are excellent choices. Their mild sweetness is intensified by caramelization.

Red onions possess a slightly bolder flavor and transform into a rich purple hue when caramelized.

White onions are noticeably less sweet compared to yellow or Vidalia onions, but their flavor is significantly enhanced through caramelization.

Shallots offer a well-balanced flavor as they are sweeter and more subtle than onions, which are sharper. Their sweet profile is significantly enhanced with caramelization.



Every onion can caramelize. Feel free to experiment. Such as caramelizing a combination of different onion types, as the mingling of flavors from various varieties can be delightful.

How to Caramelize Onions

Peel, halve, and thinly slice 2 large yellow onions.

Add 1 tablespoon olive oil and 1 tablespoon butter to a large nonstick skillet.

Add the onions and cook slowly over medium heat until golden and jammy, about 30 minutes. Stir occasionally. Add 1 teaspoon water if onions begin to stick to bottom of skillet.

Add 2 tablespoons dark brown sugar and 2 tablespoons red wine vinegar and mix well with caramelized onions.

Continue cooking, stirring occasionally, another 5 minutes. Remove from heat, plate onions and set aside.

Putting Together The Seattle Dog

In a medium bowl add both the room temperature cream cheese (8 ounces), goat cheese (1/4 cup) and 1/2 teaspoon granulated garlic. Mix together until combined.

Place bowl in microwave. Warm for less than 2 minutes to make cheese mixture spreadable.



Spread cream cheese onto grilled buns. Fill each bun first with a grilled dog, followed by Sriracha mayo, caramelized onions and bacon bites. Top with marinated peppers if using.

    I love cream cheese but not sure I would on a hotdog. I would definitely give it a try though. It’s funny how different states make a dish famous.
