Pancetta And Sweet Pepper Frittata With Queso Fresco
5 large eggs
1/4 cup heavy cream
1/2 cup sharp cheddar, shredded on small holes of box shedder
1 tablespoon butter, salted
1 tablespoon virgin olive oil
1/2 shallot, chopped
2 cloves garlic, smashed, minced
1 teaspoon Harissa seasoning (can use 1/2 teaspoon for less heat)
1/2 jalapeño, seeded, chopped
5 mini-red sweet peppers, stemmed, seeded, chopped
4 ounce package smoked pancetta, cooked, chopped
3/4 cup Mexican Queso fresco, crumbled
Fresh roughly chopped cilantro for serving (optional)
Turn oven broiler to High.
In a small measuring cup or bowl whisk eggs, heavy cream and sharp cheddar until well combined. Set aside.
Place a 10-inch oven proof nonstick skillet over medium high heat. Add butter and melt. As butter lightly sizzles, add olive oil.
Next add garlic, shallots and Harissa seasoning. Sauté until fragrant, about 3-4 minutes.
Add chopped jalapeños, sweet pepper, and pancetta. Continue cooking until peppers are just beginning to soften, about 4-5 minutes.
Remove from heat and mix in with egg mixture. Set pan over medium heat and pour mixture into pan.
Make sure vegetable-meat mixture is set bread out evenly as possible. Let cook until til just set, about 7-8 minutes.

Top evenly with crumbled Queso fresco. Place oven proof nonstick skillet under broiler until cheese melts. Watch carefully so cheese doesn’t burn.
