Oven-Charred Broccoli With Pistachios And Parmesan
2 pounds broccoli, florets cut into 2-inch pieces, stems peeled and sliced about ¼ inch thick
2 tablespoons neutral oil, such as avocado
Kosher salt and ground black pepper
Heat the oven to 500°F with a rack in the lowest position. Set a heavyweight rimmed baking sheet on the rack.
In a large bowl, toss the broccoli with the oil, ¼ teaspoon salt and ½ teaspoon pepper. Carefully remove the hot baking sheet from the oven and distribute the broccoli in an even layer.
