One Skillet Cilantro Lime Chicken Thighs
1 ½ pounds chicken thighs, boneless, skinless
⅓ cup fresh cilantro or parsley chopped
⅓ cup fresh lime juice
Zest of one lime
½ teaspoon smoked paprika, optional
1 teaspoon garlic, minced (about 2 medium cloves)
2 tablespoons olive oil divided
Salt and pepper to taste
½ cup chicken broth
Place the chicken thighs in a bowl and add salt, black pepper, red chili flakes, garlic granules, lime zest, olive oil, lime juice, chopped cilantro and mix to combine. Cover the chicken with cling film and marinate for at least 30 minutes.
Place a large skillet over medium heat, add olive oil then heat until hot. Remove the chicken from the marinate shaking off moisture and carefully add to the hot skillet.
Sear the chicken on each side, 4 minutes or until browned. Add ½ cup broth to deglaze and pan, squeeze the juice of half a lime on top of the chicken and continue to cook the thighs for additional 2 minutes each side making sure thighs are coated with the pan sauce.

Remove from heat and serve with rice and lime wedges.
