Even though Mac and cheese is one of America’s favorite comfort foods, the dish is actually from English cuisine (United Kingdom).
A good dish of mac and cheese, like this recipe, is guaranteed to be the most craveworthy dish at your dinner table tonight.
Instant Pot Bacon Alfredo Mac & Cheese
1 8-ounce box, penne pasta, plant-based, such as Banza brand or your favorite
3 cups water
2 teaspoons unsalted butter
1/2 teaspoon Himalayan salt
7 strips thick cut bacon, chopped 1/2 inch pieces
3/4 cup Alfredo sauce – Find Recipe HERE
1/2 cup frozen petite green peas
On the Instant Pot select SAUTÉ then HIGH temperature and allow to preheat.
Add chopped bacon to inner pot. Cook, stirring bacon until just crisp, about 7-8 minutes. Spoon cooked bacon yo a napkin lined plate.
Add salt, butter, pasta and water to inner pot. Close and lock the lid and cook on high pressure for 3 minutes. When time is up, quick release to vent pressure.
Turn sauté mode off. Remove bacon grease and clean pot. Return pot snd insert to the Instant Pot.
Place pasta in a strainer, rinse under cold water and return to the inner pot. Add peas, bacon and Alfredo sauce. Stir to combine after each addition.
Spoon the Bacon Alfredo Mac & Cheese from the Instant Pot to plates and serve with your favorite protein, a salad or sandwich.
